Minkies work with Modern standard, a London based speciality roaster to roast their own blend of beans, run by Lynsey and ZsuZsa. Lynsey is a qualified Q Grader, World Barista Championships Technical Judge, World Brewers Cup Sensory Judge and UK Barista Championships Head Judge. Zsuzsa started her coffee journey in 2010, at the tender age of 20 years old, as a barista at one of the first speciality coffee shops in Budapest, working with Tibor Varady at Espresso Embassy and since moving to London, she has worked at Workshop Coffee in Marylebone.
Minkies blend is made up of two beans, 50% colombia/ Aromas del Sur. This bean is washed and sun dried. It is blended with 50% Brazil/Santa Lucia, which is pulped and left natural. Both are roasted in London. the flavours achieved contain notes of caramel, milk chocolate and are cut with a citrus acidity.
